SDSU food scientists Shirin Pourafshar, left, and Padu Krishnan process South Dakota soybeans using the Vitacow (SoyCow). The instrument processes soybeans for the production of soymilk. Soymilk is the starting material for many high-protein soy food products. The self-contained food processing unit employs high temperature, steam, pressure and a high-speed wet grinder to produce wholesome foods. The unit is particularly suited for processing plant-based (vegetable, grain and fruit) foods for international nutrition projects. Pourafshar is pursuing a doctorate in phytonutrients and health.
